Make Mixed Bean and Chicken Sausage Rice Bowl
Recipe Name: Mixed Bean and Chicken Sausage Rice Bowl
Ingredients:
- 1 cup Basmati rice
- 1 cup Red lentils (masoor dal)
- 2 slices Bread
- 2 Frozen parathas
- 1 Egg
- 1 Banana
- 1 cup Milk
- 1 Onion, diced
- 2 Potatoes, diced
- 1 cup Chopped spinach
- 1 can Canned tomatoes
- 1 can Canned mixed beans (Peas and carrots mix)
- 4 Chicken sausages, sliced
- 1/2 lb Lean ground chicken
- 2 Chicken burger patties, crumbled
- 1/4 cup Strawberry syrup
- 2 tbsp Oil
- 2 tbsp Honey
- 2 tbsp Soy sauce
- 2 tbsp White vinegar
- 2 tbsp Sweet heat sauce
- 2 tbsp Sweet chili sauce
- 2 tbsp French dressing
- 2 tbsp Ketchup
- 1 tbsp Hot sauce
- 1 tsp Chili powder
- 1 tsp Turmeric
- 1 tsp Cumin
- Salt, to taste
- Black pepper, to taste
- 1 tsp Chicken seasoning
- 1/2 tsp Ground cinnamon
- 1 tsp Paprika
- 1 tsp Seasoning salt
- 1 tbsp Minced ginger
- 1 tbsp Roasted garlic puree
- 1 tbsp Curry powder
- 2 tbsp Peanut butter
- 2 tbsp Strawberry Jam
Instructions:
1. Cook Basmati rice according to package instructions.
2. In a separate pot, cook the red lentils until tender, then set aside.
3. Toast the bread slices and frozen parathas, then cut them into small cubes.
4. In a bowl, whisk the egg and milk together to make a batter. Dip the bread cubes and paratha pieces in the batter, then fry until golden brown. Set aside.
5. In a large pan, heat oil and sauté the diced onion until translucent.
6. Add the diced potatoes and cook until slightly tender.
7. Stir in the chopped spinach, canned tomatoes, and canned mixed beans. Cook for a few minutes.
8. Add the sliced chicken sausages, lean ground chicken, and crumbled chicken burger patties to the pan. Cook until the meat is browned.
9. Mix in the strawberry syrup, honey, soy sauce, white vinegar, sweet heat sauce, sweet chili sauce, French dressing, ketchup, hot sauce, chili powder, turmeric, cumin, salt, black pepper, chicken seasoning, ground cinnamon, paprika, seasoning salt, minced ginger, roasted garlic puree, and curry powder. Stir well to combine.
10. Add the cooked red lentils to the pan and mix everything together.
11. Serve the mixed bean and chicken sausage mixture over the cooked Basmati rice.
12. Garnish with a dollop of peanut butter and a spoonful of strawberry jam.
