Ingredients:
- 1 onion, sliced
- 2 tomatoes, chopped
- Salt to taste
- 4 eggs
- 3 cloves of garlic, minced
- 1 ridge gourd, peeled and diced
- 1 carrot, peeled and sliced
- 1 radish, peeled and diced
- 1 beetroot, peeled and diced
Step by Step Guide:
1. Heat some oil in a pan over medium heat.
2. Add the sliced onion and minced garlic. Saute until the onion turns translucent.
3. Add the chopped tomatoes and cook until they soften.
4. Add the diced ridge gourd, carrot, radish, and beetroot. Stir well to combine.
5. Cover the pan and let the vegetables cook until they are tender.
6. In a separate bowl, beat the eggs with a pinch of salt.
7. Push the vegetables to one side of the pan and pour the beaten eggs into the empty side.
8. Let the eggs cook for a minute, then scramble them and mix with the vegetables.
9. Season with salt to taste and stir everything together.
10. Cook for another 2-3 minutes until the eggs are fully cooked.
