Make Moong Dal Khichdi

Recipe Name: Moong Dal Khichdi

Ingredients:
- 1 cup Moong dal (split yellow lentils)
- 1 cup Basmati rice
- 1 onion, finely chopped
- 1 tomato, chopped
- 2-3 green chilies, slit
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- 4 cups water
- 2 tbsp ghee (clarified butter)
- Fresh coriander leaves for garnish

Instructions:
1. Wash the moong dal and rice together under running water until the water runs clear. Soak them in water for about 15-20 minutes.
2. In a pressure cooker, heat ghee over medium heat. Add cumin seeds and let them splutter.
3. Add the chopped onions and green chilies. Saute until the onions turn translucent.
4. Add the chopped tomatoes and cook until they soften.
5. Drain the water from the soaked moong dal and rice, and add them to the pressure cooker.
6. Add turmeric powder, red chili powder, and salt. Mix well.
7. Pour in 4 cups of water and stir everything together.
8. Close the pressure cooker with the lid and cook on high heat until 2 whistles. Then, reduce the heat to low and cook for another 5-7 minutes.
9. Turn off the heat and let the pressure release naturally.
10. Open the pressure cooker, give the khichdi a good stir, and garnish with fresh coriander leaves.
11. Serve hot with a dollop of ghee or yogurt on top.
