Mushroom and Almond Rice Pilaf
Ingredients:
- 2 cups long-grain white rice
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 8 ounces mushrooms, sliced
- 1/2 cup slivered almonds
- 2 potatoes, peeled and diced
- 4 cups chicken broth
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the paprika and mushrooms and cook until the mushrooms are softened, about 5 minutes.
3. Add the rice, almonds, potatoes, and chicken broth. Bring to a boil, then reduce the heat to low and simmer for 20 minutes, or until the rice is cooked and the potatoes are tender.
4. Season with salt and pepper to taste. Serve hot.
