Mushroom and Broccoli Egg Bake

Ingredients:

- 2 tablespoons of olive oil
- 1 cup of diced mushrooms
- 1 cup of chopped broccoli
- 4 eggs
- 1/2 cup of shredded cheese
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. Heat olive oil in a skillet over medium heat.

3. Add mushrooms and broccoli to the skillet and cook until softened, about 5 minutes.

4. Grease a baking dish with cooking spray and add the mushroom and broccoli mixture.

5. Crack the eggs over the top of the vegetables and sprinkle with cheese.

6. Season with salt and pepper to taste.

7. Bake in preheated oven for 20 minutes, or until eggs are cooked through.

8. Serve warm. Enjoy!
