Mushroom and Egg Frittata

Ingredients:

- 2 tablespoons olive oil

- 8 ounces mushrooms, sliced

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 6 large eggs

- 1/2 cup milk

- 1/2 cup shredded cheese

Instructions:

1. Preheat oven to 375°F.

2. Heat olive oil in a large oven-safe skillet over medium heat. Add mushrooms and season with salt and pepper. Cook, stirring occasionally, until mushrooms are softened, about 5 minutes.

3. In a medium bowl, whisk together eggs and milk. Pour egg mixture over mushrooms and stir to combine. Sprinkle cheese over top.

4. Bake in preheated oven for 15-20 minutes, or until eggs are set and cheese is melted.

5. Serve warm. Enjoy!
