Mushroom and Egg Stir-Fry

Ingredients:

- 2 eggs
- 2 mandarines
- 2 cups of sliced brown mushrooms
- 1 potato, peeled and diced
- 1 onion, diced
- 2 carrots, diced

Instructions:

1. Heat a large skillet over medium-high heat and add 1 tablespoon of oil.

2. Add the mushrooms and cook for about 5 minutes, stirring occasionally.

3. Add the potatoes, onions, and carrots and cook for an additional 5 minutes, stirring occasionally.

4. Crack the eggs into the skillet and stir to combine.

5. Peel and section the mandarines and add them to the skillet.

6. Cook for an additional 5 minutes, stirring occasionally, until the eggs are cooked through and the vegetables are tender.

7. Serve hot. Enjoy!
