Mushroom and Onion Gnocchi
Ingredients:
-1 package of gnocchi
-1 onion, diced
-8 ounces mushrooms, sliced
-2 tablespoons olive oil
-Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil.
2. Add the gnocchi to the boiling water and cook according to package instructions.
3. Meanwhile, heat the olive oil in a large skillet over medium heat.
4. Add the onion and mushrooms and cook until the onion is softened and the mushrooms are golden brown, about 5 minutes.
5. Season with salt and pepper to taste.
6. Drain the cooked gnocchi and add it to the skillet with the mushrooms and onion.
7. Cook for an additional 2 minutes, stirring occasionally, until the gnocchi is heated through.
8. Serve warm. Enjoy!
