Mushroom and Potato Frittata

Ingredients:

- 2 tablespoons olive oil
- 2 medium potatoes, peeled and diced
- 1 cup sliced mushrooms
- 6 large eggs
- 1/2 cup shredded cheese
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350 degrees F.

2. Heat olive oil in a large oven-safe skillet over medium heat. Add potatoes and cook for 5 minutes, stirring occasionally.

3. Add mushrooms and cook for an additional 5 minutes, stirring occasionally.

4. In a medium bowl, whisk together eggs, cheese, salt, and pepper.

5. Pour egg mixture over potatoes and mushrooms in the skillet. Cook for 5 minutes, stirring occasionally.

6. Place skillet in the oven and bake for 15 minutes, or until eggs are set.

7. Serve warm. Enjoy!
