Mushroom and Squash Fried Rice

Ingredients:

- 2 cups cooked white rice
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 tablespoons fresh ginger, minced
- 1 cup mushrooms, sliced
- 1 cup squash, diced
- 2 tablespoons soya sauce
- 2 tablespoons sesame oil
- 2 spring onions, chopped
- Salt and pepper to taste

Instructions:

1. Heat the oil in a large skillet over medium-high heat.

2. Add the garlic and ginger and cook for 1 minute, stirring constantly.

3. Add the mushrooms and squash and cook for 3-4 minutes, stirring occasionally.

4. Add the cooked rice and stir to combine.

5. Add the soya sauce, sesame oil, and spring onions and stir to combine.

6. Cook for an additional 2-3 minutes, stirring occasionally.

7. Season with salt and pepper to taste.

8. Serve hot. Enjoy!
