Mushroom and Tofu Fried Rice
Ingredients:
-1 cup uncooked white rice
-1/2 cup mushrooms, sliced
-1/2 block extra firm tofu, cubed
-2 tablespoons soy sauce
-2 tablespoons vegetable oil
Instructions:
1. Cook the rice according to package instructions.
2. Heat the oil in a large skillet over medium-high heat.
3. Add the mushrooms and tofu to the skillet and cook until the mushrooms are softened and the tofu is lightly browned, about 5 minutes.
4. Add the cooked rice to the skillet and stir to combine.
5. Pour the soy sauce over the mixture and stir to combine.
6. Cook for an additional 5 minutes, stirring occasionally, until the rice is heated through.
7. Serve hot. Enjoy!
