Mushroom Rice and Potato Casserole
Ingredients:
- 2 cups cooked white rice
- 4 potatoes, peeled and diced
- 1 can (14.5 ounces) of mushrooms, drained
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, combine the cooked rice, diced potatoes, mushrooms, olive oil, garlic powder, onion powder, oregano, salt, and pepper. Mix until everything is evenly combined.
3. Transfer the mixture to a 9x13 inch baking dish.
4. Bake for 40-45 minutes, or until the potatoes are tender and the top is golden brown.
5. Serve warm and enjoy!
