Ingredients:
- 4 eggs
- 1 cup cooked rice
- 1 cup sliced mushrooms
- 1/4 cup diced onions
- 1/4 cup diced bell peppers

- 2 tablespoons butter or oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)

Step-by-Step Guide:

1. In a large bowl, crack the eggs and whisk them until well beaten. Season with salt and pepper according to your taste.

2. Heat a tablespoon of butter or oil in a non-stick skillet over medium heat. Add the diced onions and bell peppers and sauté until they become translucent and slightly softened.

3. Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender. This should take about 5-7 minutes.

4. Once the mushrooms are cooked, add the cooked rice to the skillet. Stir well to combine all the ingredients and allow the rice to heat through.

5. Push the rice and mushroom mixture to one side of the skillet, creating a space for the omelette.
