Mushroom Rice Pasta Bake
Ingredients:
-1 cup of cooked rice
-1/2 cup of cooked pasta
-1/2 cup of diced tofu
-1/2 cup of tomato sauce
-1/2 cup of cooked beans
-1/4 cup of sliced almonds
-1/4 cup of chopped salad greens
-1 teaspoon of paprika
-1/2 cup of freshly squeezed orange juice
-1/2 cup of soya yoghurt
-1 cup of sliced mushrooms
Instructions:
1. Preheat oven to 350°F (175°C).
2. In a large bowl, combine the cooked rice, pasta, tofu, tomato sauce, beans, almonds, salad greens, paprika, orange juice and soya yoghurt. Mix until all ingredients are evenly distributed.
3. Grease a 9x13 inch baking dish with cooking spray.
4. Pour the mixture into the baking dish and spread it out evenly.
5. Top with the sliced mushrooms.
6. Bake for 25 minutes or until the mushrooms are golden brown and the pasta is cooked through.
7. Serve warm and enjoy!
