Chicken and Mushroom Spaghetti

Ingredients:

-1 lb. spaghetti
-2 tablespoons olive oil
-1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
-1 onion, diced
-2 cloves garlic, minced
-8 ounces mushrooms, sliced
-1/2 teaspoon dried oregano
-1/2 teaspoon dried basil
-1/4 teaspoon red pepper flakes
-1/2 cup chicken broth
-1/4 cup white wine
-1/4 cup grated Parmesan cheese
-Salt and pepper, to taste

Instructions:

1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions. Drain and set aside.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until lightly browned, about 5 minutes.

3. Add the onion, garlic, mushrooms, oregano, basil, and red pepper flakes. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.

4. Add the chicken broth and white wine. Bring to a simmer and cook until the liquid is reduced by half, about 10 minutes.

5. Add the cooked spaghetti to the skillet and toss to combine. Sprinkle with the Parmesan cheese and season with salt and pepper, to taste.

6. Serve the chicken and mushroom spaghetti warm. Enjoy!
