Mustard-Glazed Cod with Bacon and Vegetables
Ingredients:
- 4 cod fillets
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 4 slices bacon, diced
- 1/2 head cabbage, shredded
- 1 carrot, shredded
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 400°F.
2. In a small bowl, whisk together mustard and honey.
3. Place cod fillets on a baking sheet lined with parchment paper. Brush with mustard mixture and season with salt and pepper.
4. In a large skillet over medium heat, cook bacon until crisp. Remove bacon from skillet and set aside.
5. Add olive oil to skillet and heat. Add cabbage and carrot and cook until softened, about 5 minutes.
6. Place cabbage and carrot mixture on top of cod fillets. Sprinkle bacon over the top.
7. Bake in preheated oven for 15-20 minutes, or until cod is cooked through.
8. Serve hot. Enjoy!
