Ingredients:
- 2 cups of rice
- 1 lb of chicken, cut into pieces
- 1 onion, chopped
- 1 bell pepper, diced
- 3 cloves of garlic, minced
- 2 tomatoes, chopped
- Salt to taste

Step by Step Guide:
1. In a large pot, heat some oil over medium heat.
2. Add the chopped onion and minced garlic, sauté until fragrant.
3. Add the diced bell pepper and cook until softened.
4. Add the chicken pieces and brown on all sides.
5. Stir in the chopped tomatoes and cook until they start to break down.
6. Season with salt to taste.
7. Add the rice to the pot and stir to combine with the chicken and vegetables.
8. Pour in enough water to cover the rice and chicken mixture.
9. Cover the pot and let it simmer on low heat until the rice is cooked and the chicken is tender.
10. Check for seasoning and adjust if needed.
11. Serve the African Chicken Jollof Rice hot and enjoy!
