Recipe Name: Arroz con Papa a la Huancaina

Ingredients:
- 2 cups of arroz
- 2 tablespoons of aceite vegetal
- 1 tablespoon of aceite de oliva
- 1 tablespoon of vinagre tinto
- 1 teaspoon of sal
- 1/2 teaspoon of pimienta
- 1 teaspoon of azúcar
- 2 huevos
- 2 tablespoons of mantequilla
- 1 papa blanca
- 2 dientes de ajo
- 1 cebolla roja
- 1 ají amarillo
- 1 ají limo
- 1/4 cup of culantro
- 1/4 cup of perejil
- 1 tomate
- 1 limón

Instructions:
1. Cook the arroz according to package instructions and set aside.
2. In a blender, combine the aceite vegetal, aceite de oliva, vinagre tinto, sal, pimienta, azúcar, and the juice of half a limón. Blend until smooth to make the Huancaina sauce.
3. Boil the huevos until hard-boiled, then peel and slice them.
4. In a separate pot, boil the papa blanca until tender, then peel and slice into rounds.
5. In a pan, heat the mantequilla and sauté the ajo, cebolla roja, ají amarillo, and ají limo until softened.
6. Add the culantro, perejil, and tomate to the pan and cook for a few minutes.
7. To assemble, place a serving of arroz on a plate, top with the Huancaina sauce, and arrange the sliced huevos and papa blanca on top.
8. Garnish with the sautéed vegetable mixture and serve with slices of limón on the side.
