- 1 cup of arroz (rice)
- 1 pound of pollo (chicken), cut into pieces
- 1 morron (bell pepper), diced
- 1 huevo (egg)
- 1 zanahoria (carrot), grated
Instructions:
1. In a large pot, heat some oil over medium heat.
2. Add the chicken pieces and brown them on all sides.
3. Add the diced bell pepper and grated carrot to the pot and sauté for a few minutes.
4. Add the rice to the pot and stir to coat the grains with the oil and juices from the chicken and vegetables.
5. Pour in enough water to cover the rice and chicken, bring to a boil, then reduce heat to low and cover the pot.
6. Let the arroz con pollo simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
7. In a separate pan, fry the egg to your liking.
