Ingredients:
- 6 slices of bacon, chopped
- 2 large carrots, diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 medium potatoes, peeled and diced

Instructions:
1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the pan.
2. Add the diced carrots to the skillet and cook for about 5 minutes until they start to soften.
3. Add the chopped onion and minced garlic to the skillet and cook for another 2-3 minutes until the onion is translucent.
4. Add the diced potatoes to the skillet and cook, stirring occasionally, until the potatoes are tender and slightly crispy on the outside.
5. Once the potatoes are cooked through, add the cooked bacon back to the skillet and stir to combine.
6. Season the hash with salt and pepper to taste.
7. Serve the bacon and potato hash hot, garnished with fresh herbs if desired.
