Ingredients:
- 2 carrots, sliced
- 1 onion, chopped
- 1 aubergine, diced
- 2 tomatoes, chopped
- 3 cloves of garlic, minced
- 200g feta cheese
- 2 tbsp tomato puree
- 250g pasta of your choice
- 1 cup grated cheese (such as cheddar or mozzarella)

Instructions:
1. Preheat the oven to 200°C (400°F).
2. In a baking dish, combine the carrots, onion, aubergine, tomatoes, and garlic.
3. Drizzle with olive oil, season with salt and pepper, and toss to coat the vegetables evenly.
4. Place the feta cheese block in the center of the vegetables.
5. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the feta is golden and softened.
6. While the vegetables are roasting, cook the pasta according to package instructions until al dente.
7. Once the vegetables and feta are done, remove from the oven and stir in the tomato puree to create a creamy sauce.
8. Add the cooked pasta to the baking dish and toss to coat the pasta in the sauce.
9. Sprinkle the grated cheese over the top.
10. Return the dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
11. Serve hot and enjoy!
