- 1 can of beans (black beans or kidney beans)

- 1 ripe avocado (diced)
- 1 cup of corn kernels (fresh or frozen)
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
1. Cook the rice according to package instructions and set aside.
