Ingredients:
- 1 lb ground beef
- 4 large bell peppers
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 can diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes.
3. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
4. In a large bowl, mix together the cooked ground beef, cooked rice, diced tomatoes, garlic powder, onion powder, salt, and pepper.
5. Stir in half of the shredded cheddar cheese.
6. Stuff each bell pepper with the beef and rice mixture.
7. Place the stuffed bell peppers in a baking dish and cover with foil.
8. Bake in the preheated oven for 25-30 minutes.
9. Remove the foil, sprinkle the remaining cheddar cheese on top of the peppers, and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
10. Serve hot and enjoy!
