Ingredients:
- 1/2 lb minced beef
- 4 chicken thighs, boneless and skinless
- 2 tablespoons soy sauce
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup buckwheat
- 1 cup rice
- 2 potatoes, diced
Instructions:
1. In a large skillet, heat some oil over medium heat. Add the minced beef and cook until browned. Remove from skillet and set aside.
2. In the same skillet, add the chicken thighs and cook until they are cooked through. Remove from skillet and slice into strips.
3. Add the sliced onions and minced garlic to the skillet and cook until softened.
4. Add the cooked beef and chicken back to the skillet. Pour in the soy sauce and stir to combine.
5. In a separate pot, cook the buckwheat and rice according to package instructions.
6. In another pan, fry the diced potatoes until they are golden and crispy.
7. Serve the beef and chicken stir-fry over a bed of buckwheat and rice. Top with the crispy potatoes.
8. Optional: Serve with a dollop of sour cream on top.
