Ingredients:
- 1 lb ground beef
- 4 bell peppers
- 1 cup diced mushrooms
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 cup shredded cheese
- Salt and pepper to taste
- Olive oil

Step by Step Guide:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish.
3. In a skillet, heat some olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.
4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
5. Add the diced mushrooms to the skillet and cook until they are softened.
6. Stir in the cooked rice and season with salt and pepper to taste.
7. Spoon the beef and mushroom mixture into the bell peppers, filling them to the top.
8. Sprinkle shredded cheese on top of each stuffed bell pepper.
9. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
10. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
11. Serve the beef and mushroom stuffed bell peppers hot and enjoy!
