Ingredients:
- 1 cup rice
- 1/2 lb minced beef
- 2 tomatoes, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups beef broth
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions:
1. In a large skillet, heat olive oil over medium heat.
2. Add the chopped onion and minced garlic, sauté until fragrant.
3. Add the minced beef to the skillet, breaking it up with a spoon and cook until browned.
4. Stir in the diced tomatoes, cumin, paprika, salt, and pepper. Cook for another 5 minutes.
5. Add the rice to the skillet and stir to combine with the meat and tomato mixture.
6. Pour in the beef broth and bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
7. Fluff the rice with a fork and let it sit covered for a few more minutes.
8. Serve the beef and tomato rice hot, garnished with fresh parsley.
