Ingredients:
- 1 beet, peeled and diced
- 1 can of chickpeas, drained and rinsed
- 1/4 cup of olive oil
- 2 tablespoons of balsamic vinegar
- 1 teaspoon of honey
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Instructions:
1. In a large mixing bowl, combine the diced beet and chickpeas.
2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
3. Pour the dressing over the beet and chickpea mixture and toss until well coated.
