Recipe Name: Black Eyed Pea and Turkey Plantain Stew

Ingredients:
- 2 cups cooked black eyed peas
- 1 lb cooked ground turkey
- 2 tbsp olive oil
- 1 red pepper, diced
- 1 red onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 2 green plantains, peeled and sliced

Instructions:
1. In a large pot, heat olive oil over medium heat.
2. Add the diced red pepper, chopped red onion, and minced garlic. Saute until the vegetables are softened, about 5 minutes.
3. Stir in the cooked ground turkey and cooked black eyed peas. Cook for another 5 minutes to allow the flavors to meld.
4. Pour in the coconut milk and bring the stew to a simmer.
5. Add the sliced green plantains to the pot and stir to combine.
6. Cover the pot and let the stew simmer for about 15-20 minutes, or until the plantains are tender.
7. Season with salt and pepper to taste.
8. Serve hot and enjoy!
