Ingredients:
- 1 cup black rice
- 1 lb prawns, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
1. Cook the black rice according to package instructions and set aside.
2. In a large skillet or wok, heat vegetable oil over medium-high heat.
3. Add the sliced onions, garlic, and ginger. Stir-fry for 2-3 minutes until fragrant.
4. Add the sliced bell peppers and cook for another 2-3 minutes until slightly softened.
5. Push the vegetables to one side of the pan and add the prawns. Cook for 2-3 minutes until they turn pink and opaque.
6. Mix the vegetables and prawns together in the pan.
7. Add the cooked black rice to the pan and stir well to combine.
8. Pour in the soy sauce, oyster sauce, and sesame oil. Stir everything together until well coated.
9. Season with salt and pepper to taste.
10. Garnish with fresh cilantro before serving.
