Ingredients:
- 1 cup bulgur
- 1/2 cup quinoa
- 2 tomatoes, diced
- 1 onion, finely chopped
- 3 tablespoons olive oil
- 2 carrots, grated

Instructions:
1. Rinse the bulgur and quinoa separately under cold water.
2. In a pot, bring 2 cups of water to a boil. Add the bulgur, reduce heat to low, cover, and simmer for 10-12 minutes or until the water is absorbed.
3. In another pot, bring 1 cup of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
4. In a large mixing bowl, combine the cooked bulgur and quinoa.
5. Add the diced tomatoes, chopped onion, and grated carrots to the bowl.
6. Drizzle the olive oil over the salad and toss well to combine.
7. Season with salt and pepper to taste.
8. Serve the Bulgur and Quinoa Salad chilled or at room temperature.
