Recipe Name: Cheesy Bacon Risotto

- 1 cup Arborio rice
- 1/2 teaspoon salt
- 1 cup grated cheese
- 1 onion, finely chopped
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 4 slices bacon, chopped
- 2 stalks celery, diced
- 2 carrots, diced
- 2 cups milk
- 4 cups chicken broth

1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
2. Add the onion, celery, and carrots to the pot and cook until softened, about 5 minutes.
3. Stir in the garlic and cook for another minute until fragrant.
4. Add the Arborio rice to the pot and cook, stirring constantly, for 2 minutes.
5. Pour in the chicken broth, 1/2 cup at a time, stirring frequently and allowing the liquid to be absorbed before adding more.
6. Once all the chicken broth has been absorbed and the rice is creamy and tender, stir in the milk and cheese until melted and well combined.
7. Season the risotto with salt and black pepper to taste.
8. Serve the cheesy bacon risotto topped with the crispy bacon.
