Ingredients:
- 2 carrots, grated
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 1 onion, diced
- 1 cup of shredded cheese (cheddar or mozzarella)
- 2 tomatoes, diced
- 1/2 teaspoon of salt
- 6 eggs

Instructions:
1. Preheat the oven to 350°F (180°C).
2. In a large skillet, sauté the diced onion and minced garlic until fragrant.
3. Add the grated carrots and diced bell pepper to the skillet and cook until they start to soften.
4. Stir in the diced tomatoes and cook for another 2-3 minutes.
5. In a separate bowl, whisk the eggs together with the salt.
6. Pour the egg mixture over the vegetables in the skillet and gently stir to combine.
7. Sprinkle the shredded cheese on top of the mixture.
8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and the cheese is melted and bubbly.
9. Remove from the oven and let it cool slightly before slicing and serving.
