Ingredients:
- 1 cup of rice
- 1 lb of chicken breast, diced
- 2 eggs
- 1 cup of shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 cup of pasta
- Salt, to taste
- 1 tomato, diced
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a large skillet, cook the diced chicken until no longer pink. Season with salt and pepper to taste.
4. In a separate pan, scramble the eggs and set aside.
5. In the same skillet used for the chicken, sauté the diced onion, bell pepper, and minced garlic until softened.
6. Add the cooked rice, scrambled eggs, cooked chicken, diced tomato, and pasta to the skillet. Mix well.
7. Transfer the mixture to a baking dish and sprinkle the shredded cheese on top.
8. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
