Ingredients:
- 1 lb chicken, diced
- 1 cup rice
- 1 cup shredded cheese
- 2 eggs
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- Salt to taste

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, cook the diced chicken until browned and cooked through. Remove from the skillet and set aside.
3. In the same skillet, sauté the diced onion, bell pepper, and minced garlic until softened.
4. Add the diced tomato to the skillet and cook for another 2-3 minutes.
5. Stir in the cooked chicken and cooked rice into the skillet, mixing well.
6. In a separate bowl, beat the eggs and pour over the chicken and rice mixture. Stir to combine.
7. Season with salt to taste and mix in half of the shredded cheese.
8. Transfer the mixture to a baking dish and top with the remaining shredded cheese.
9. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
10. Remove from the oven and let it cool slightly before serving.
