Ingredients:
- 1 lb chicken, diced
- 2 eggs
- 3 cloves of garlic, minced
- 1 tsp pepper
- 1 cup cheese, shredded
- 1 tsp salt
- 1 onion, diced
- 1 cup rice
- 1/2 cup sour cream
- 1 tomato, diced
- 2 potatoes, peeled and diced
- 2 cups chicken stock
- 1 cup peas
- 1 cup beans
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, cook the diced chicken until browned and cooked through. Set aside.
3. In a mixing bowl, beat the eggs and mix in the minced garlic, pepper, shredded cheese, and salt.
4. Add the diced onion, rice, sour cream, diced tomato, diced potatoes, chicken stock, peas, and beans to the egg mixture. Mix well to combine.
5. Stir in the cooked chicken and transfer the mixture to a greased casserole dish.
6. Cover the casserole dish with foil and bake in the preheated oven for 45 minutes.
7. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the rice is cooked through.
8. Serve hot and enjoy!
