Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 2 eggs
- 1 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- 1 cup pasta
- Salt to taste
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, cook the diced chicken until browned and cooked through. Set aside.
3. In a separate pot, cook the rice according to package instructions.
4. In a mixing bowl, beat the eggs and mix in half of the shredded cheese.
5. In the skillet used for the chicken, sauté the onion, bell pepper, garlic, and tomato until softened.
6. Add the cooked rice and pasta to the skillet and mix well.
7. Stir in the cooked chicken and season with salt to taste.
8. Transfer the mixture to a baking dish and pour the egg and cheese mixture on top.
9. Sprinkle the remaining shredded cheese over the casserole.
10. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
