Ingredients:
- 1 cup rice
- 1 lb chicken breast, diced
- 2 eggs
- 1 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- Salt to taste

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a large skillet, cook the diced chicken until browned and cooked through. Season with salt and pepper.
4. In a separate pan, scramble the eggs and set aside.
5. In the same skillet used for the chicken, sauté the onion, bell pepper, garlic, and tomato until softened.
6. In a large mixing bowl, combine the cooked rice, chicken, scrambled eggs, sautéed vegetables, and half of the shredded cheese. Mix well.
7. Transfer the mixture to a baking dish and top with the remaining shredded cheese.
8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
