Ingredients:
- 1 lb chicken breast, diced
- 1 cup shredded cheese
- 1 onion, diced
- 1 tsp salt
- 1 tomato, diced
- 2 cloves garlic, minced
- 1/2 tsp pepper
- 1 cup rice
- 2 cups water

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, cook the diced chicken over medium heat until browned and cooked through. Remove from the skillet and set aside.
3. In the same skillet, sauté the diced onion and minced garlic until fragrant.
4. Add the diced tomato and cook until softened.
5. Stir in the uncooked rice and cook for 1-2 minutes.
6. Add the water, salt, and pepper to the skillet. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the rice is cooked.
7. Stir in the cooked chicken and half of the shredded cheese.
8. Transfer the mixture to a baking dish and sprinkle the remaining cheese on top.
9. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
10. Serve hot and enjoy!
