Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 3 eggs
- 1 cup shredded cheese
- 3 cloves garlic, minced
- 1 tomato, diced
- Salt to taste
- 1 can beans, drained and rinsed
- 2 stalks celery, chopped
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, cook the diced chicken until no longer pink. Remove from the skillet and set aside.
3. In the same skillet, add the minced garlic and cook until fragrant.
4. Add the rice and cook for a few minutes until slightly toasted.
5. Stir in the diced tomato, beans, and celery. Cook for another 2-3 minutes.
6. In a bowl, whisk the eggs and season with salt.
7. Add the cooked chicken back to the skillet and pour the egg mixture over the chicken and rice. Mix well to combine.
8. Transfer the mixture to a baking dish and top with shredded cheese.
9. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
10. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
