- Spinach
- Shredded cheese
- Tortillas
- Potatoes
Instructions:
1. Shred the leftover roasted chicken into small pieces.
2. Wash and chop the spinach into small pieces.
3. Peel and dice the potatoes into small cubes.
4. In a skillet, heat some oil over medium heat and add the diced potatoes. Cook until they are golden brown and crispy. Remove from the skillet and set aside.
5. In the same skillet, add the shredded chicken and chopped spinach. Cook until the spinach wilts and the chicken is heated through.
6. Lay out a tortilla and sprinkle some shredded cheese on one half of the tortilla.

8. Sprinkle some of the crispy potatoes on top of the chicken and spinach.
9. Fold the tortilla in half to cover the filling.
10. Heat a separate skillet over medium heat and place the filled tortilla in the skillet.
11. Cook for a few minutes on each side until the tortilla is crispy and the cheese is melted.
12. Remove from the skillet and let it cool slightly before slicing into wedges.
13. Serve the Cheesy Chicken and Spinach Quesadillas with your favorite dipping sauce and enjoy!
