Ingredients:
- 1 lb chicken breast, diced
- 1 cup bulgur
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red pepper, diced
- 1 zucchini, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 cups chicken stock
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some oil over medium heat. Add the diced chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
3. In the same skillet, add a bit more oil if needed and sauté the diced onion, minced garlic, red pepper, and sliced zucchini until softened.
4. Add the bulgur to the skillet and stir to combine with the vegetables.
5. Pour in the chicken stock and bring to a simmer. Cook for about 10 minutes or until the bulgur has absorbed most of the liquid.
6. Season with salt and pepper to taste.
7. Return the cooked chicken to the skillet and mix everything together.
8. Transfer the mixture to a baking dish and sprinkle the shredded cheese on top.
9. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
10. Remove from the oven and let it cool slightly before serving.
