Ingredients:
- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 2 eggs, beaten
- 1/2 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Soy sauce (optional)

Instructions:
1. In a large skillet, heat some oil over medium heat.
2. Add the diced onion and bell pepper to the skillet and sauté until they are softened.
3. Add the minced garlic and cook for another minute.
4. Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until cooked through.
5. Add the diced chicken to the skillet and stir to combine with the vegetables and eggs.
6. Add the cooked rice to the skillet and mix everything together.
7. Season with salt and pepper to taste. You can also add a splash of soy sauce for extra flavor if desired.
8. Sprinkle the shredded cheese over the top of the fried rice and cover the skillet with a lid to melt the cheese.
9. Once the cheese is melted, remove the skillet from heat and serve the cheesy chicken fried rice hot.
