Ingredients:
- 1 lb chicken breast, cooked and shredded
- 4 eggs, scrambled
- 1 onion, diced
- 2 cups kale, chopped
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tbsp butter
- Salt and pepper to taste
- 8 small flour tortillas
Instructions:
1. In a large skillet, melt the butter over medium heat.
2. Add the diced onion and cook until translucent.
3. Add the chopped kale and cook until wilted.
4. Add the shredded chicken to the skillet and season with salt and pepper.
5. Push the chicken mixture to one side of the skillet and pour the scrambled eggs into the other side.
6. Cook the eggs until scrambled and then mix them with the chicken mixture.
7. Place a tortilla in a separate skillet over medium heat.
8. Spoon some of the chicken and egg mixture onto one half of the tortilla.
9. Sprinkle some shredded cheese on top of the mixture.
10. Fold the tortilla in half to cover the filling and press down gently.
11. Cook the quesadilla for 2-3 minutes on each side, until golden brown and the cheese is melted.
12. Repeat with the remaining tortillas and filling.
13. Serve the cheesy chicken kale quesadillas hot with your favorite salsa or sour cream.
