Ingredients:
- 1 cup cooked rice
- 2 eggs
- 1/2 cup shredded cheese
- 2 slices of bread
- 1 tablespoon butter
- 1 tablespoon peanut butter
- 1 tablespoon jelly
- 1 tablespoon yum yum sauce
- 1 tablespoon ranch dressing
- 1 tablespoon spicy mayo
- 1 tablespoon sour cream
- 1 teaspoon lime juice
- Salt, pepper, onion powder, garlic salt, chili powder, Italian seasoning to taste
Instructions:
1. In a small bowl, whisk together the eggs with a pinch of salt, pepper, onion powder, and garlic salt.
2. Heat a non-stick skillet over medium heat and melt the butter. Pour in the egg mixture and scramble until cooked through. Remove from heat and set aside.
3. Toast the bread slices until golden brown.
4. In a separate bowl, mix together the cooked rice with the shredded cheese, chili powder, and Italian seasoning.
5. Spread peanut butter on one slice of toasted bread and jelly on the other slice.
6. Layer the cheesy rice mixture on top of the peanut butter slice.
7. Place the scrambled eggs on top of the rice.
8. Drizzle yum yum sauce, ranch dressing, spicy mayo, and sour cream over the eggs.
9. Squeeze lime juice over the sandwich and sprinkle with additional salt and pepper if desired.
