- 3 eggs

- Salt and pepper to taste
Instructions:
1. In a mixing bowl, beat the eggs and season with salt and pepper.
2. Heat a non-stick pan over medium heat and add a little oil.
3. Add the diced onion, bell pepper, and minced garlic to the pan. Sauté until softened.
4. Add the cooked rice to the pan and stir to combine with the vegetables.
5. Pour the beaten eggs over the rice mixture in the pan.
6. Sprinkle the shredded cheese evenly over the top of the eggs and rice.
7. Cover the pan with a lid and let the omelette cook until the eggs are set and the cheese is melted.
