Ingredients:
- 4 large tomatoes
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of grated cheese (cheddar or mozzarella)
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of salt
- 1 cup of fresh spinach, chopped
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the tomatoes and scoop out the seeds and flesh to create a hollow cavity. Set aside.
3. In a skillet, sauté the chopped onion and minced garlic until fragrant and translucent.
4. Add the chopped spinach to the skillet and cook until wilted. Season with salt and black pepper.
5. Remove the skillet from heat and stir in the grated cheese until melted and well combined.
