Ingredients:
- 4 bell peppers
- 1 cup cooked rice
- 1 onion, diced
- 1 tomato, diced
- 1 avocado, diced
- 1 cup shredded cheese
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes.
3. In a large mixing bowl, combine the cooked rice, diced onion, diced tomato, diced avocado, and half of the shredded cheese. Mix well.
4. Stuff each bell pepper with the rice and vegetable mixture.
5. Place the stuffed bell peppers in a baking dish and sprinkle the remaining shredded cheese on top.
6. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
7. Remove the foil and bake for an additional 5 minutes to melt the cheese.
8. Serve hot and enjoy!
