Ingredients:
- 1 cup Arborio rice
- 2 cups diced tomatoes
- 1/2 cup white wine
- 1 onion, finely chopped
- 2 cups grated cheese
- Salt to taste

Instructions:
1. In a large saucepan, heat some olive oil over medium heat.
2. Add the chopped onion and sauté until translucent.
3. Add the Arborio rice to the pan and toast for a few minutes until slightly golden.
4. Pour in the white wine and stir until the wine is absorbed by the rice.
5. Add the diced tomatoes to the pan and stir well.
6. Begin adding hot water, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
7. Continue this process until the rice is cooked al dente, about 18-20 minutes.
8. Stir in the grated cheese until melted and creamy.
9. Season with salt to taste.
10. Serve the cheesy tomato risotto hot, garnished with some extra cheese on top.
