Ingredients:
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and diced
- 1 can of baked beans
- 1 onion, diced
- 4 strips of bacon, chopped
- 2 tablespoons of flour
- Seasonings (salt, pepper, garlic powder, paprika)
- 1 cup of pasta
- 1 cup of shredded cheese
- 2 eggs
- 1 cup of rice
Step by Step Guide:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, cook the bacon until crispy. Remove the bacon and set aside, leaving the bacon drippings in the skillet.
3. Add the diced onions to the skillet and cook until translucent.
4. Add the sliced carrots and diced potatoes to the skillet and cook until slightly tender.
5. Stir in the flour to create a roux, cooking for a few minutes to remove the raw flour taste.
6. Add the can of baked beans (with the sauce) to the skillet and mix well.
7. Season the vegetable mixture with salt, pepper, garlic powder, and paprika to taste.
8. Cook the pasta according to package instructions and drain.
9. In a large mixing bowl, beat the eggs and mix in the cooked pasta.
10. Layer the vegetable mixture on the bottom of a baking dish.
11. Spread the pasta and egg mixture on top of the vegetables.
12. Sprinkle the cooked bacon on top of the pasta.
13. Top the dish with shredded cheese.
14. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
15. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
