Ingredients:
- 1 cup rice
- 2 cloves of garlic, minced
- 1 green pepper, diced
- 1 red pepper, diced
- 1 onion, diced
- 2 tomatoes, diced
- 1 cup shredded cheese
- Salt to taste
- 2 eggs
- 1 cup cooked pasta
Instructions:
1. Preheat the oven to 350°F (180°C).
2. Cook the rice according to package instructions and set aside.
3. In a large skillet, sauté the garlic, green pepper, red pepper, and onion until softened.
4. Add the diced tomatoes and cook for another 2-3 minutes.
5. In a large mixing bowl, combine the cooked rice, sautéed vegetables, cooked pasta, and half of the shredded cheese. Mix well.
6. In a separate bowl, beat the eggs and then fold them into the rice and vegetable mixture. Season with salt to taste.
7. Transfer the mixture into a baking dish and sprinkle the remaining shredded cheese on top.
8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
